Ingredients

* 2 pounds top round steak, trimmed
* 2 tablespoons vegetable oil
* 1 onion, chopped
* 2 stalks celery, chopped
* 1 clove garlic, minced
* 1 (10.75 ounce) can condensed cream of mushroom soup
* 1 (12 fluid ounce) can or bottle beer
* 2 bay leaves
* 2 whole cloves

Directions

1. Heat a roasting pan over high heat, and coat bottom with oil. Sear meat on all sides. Remove from pan, and set aside.
2. Reduce heat to low, saute onion, celery and garlic, scraping up browned bits. Cover, and cook on low for 15 minutes.

¼ cup ají panca paste / sundried red panca chili paste

6 pieces of chicken (preferably bone in)
½ cup of oil
1 medium onion finely minced
1 tbsp minced garlic
½ cup of Peruvian hot yellow pepper paste
1 bush of fresh cilantro washed and blended with very little water
2 sweet peppers (red, yellow or orange) half minced, half for decoration
3 cups of rice
1 cup peas
½ cup corn
2 ½ cups of water
½ cup of beer

Wheat / Trigo Atamalado

Serves 8

Ingredients :

1 lb wheat
½ cup of oil
1 onion, chopped
3 garlic cloves, minced
2 tsp aji mirasol paste / hot yellow pepper paste
Salt
Pepper
Water or Stock
1/2 cup fresh cheese cut into small pieces
2 scallions, finely chopped

Preparation:

Soak wheat in water for approx. 3 hours. Aside, heat oil in a pan, sautee onion, garlic, hot yellow pepper paste, stir and season with salt and pepper.
Add wheat. Pour enough water or stock to cover wheat. Cook in low heat until done. Add more water or stock as needed while cooking.
