Beef Stew (Estofado de Carne)

Ingredients :

2lbs of stew beef cut into medium cubes
3 or 4 white potatoes, peeled and cut into halves
Oil
2 onions, peeled and finely chopped
¾ of cup sweet red wine or Port (Oporto) wine
3 tbsp tomato paste
3 tomatoes, peeled and finely chopped
3 laurel leaves
1 tsp of sugar
1/4 cup raisins
¾ of a cup sweet peas
6 Mediterranean olives without the pit
Salt
Pepper

Preparation:

Heat oil in a pan. Saute garlic and onions. Add the beef cubes, salt and pepper, let the meat brown, keeping the heat at medium strength. Add the tomato paste, tomatoes, sweet peas and the Port wine, laurel, raisins and sugar. Add the potatoes, let it boil until potatoes are soft. Check and rectify the seasoning. Take the laurel leaves out. Serve with white rice.
