Coriander Beef Stew

Serves 6

3 garlic cloves, crushed
2 teaspoons ground cumin
Salt and pepper, to taste
2 pounds beef, cubed
1 tablespoon vegetable oil
1 large onion, chopped
2 cups beef stock
1 tablespoon chopped cilantro
1 (14 ounce) bag spinach, chopped
3/4 cup water
5 ounces frozen green peas
1 large baking potato, peeled and cubed
The zest of 1 lime

In a small bowl, mix together the garlic, cumin salt and pepper. Place the beef in a large bowl, add the garlic mixture and mix well. Cover let marinate for at least 30 minutes.

Lomo Saltado

Serves 2

2 tablespoons vegetable oil
1/2 cup sliced onion
2 cloves garlic, minced
1/2 cup chopped red bell pepper
1 1/2 cups white potato, cubed and cooked
1 tablespoon diced jalapeno pepper
1/2 pound sirloin steak, sliced thin
1 tomato, chopped
1 teaspoon fresh oregano
Salt and pepper

Heat oil in a nonstick pan and sauté onion, garlic and bell pepper. Add potato and cook, stirring occasionally, until potato just begins to brown. Add the jalapeno and steak. Sauté a few more minutes. Stir in tomato, oregano, salt and pepper to taste. Serve warm.
