Serves 6

4 lbs golden potatoes, boiled and peeled
1/2 cup aji amarillo paste / yellow hot pepper paste
3/4 cup oil
Salt & Pepper to taste
1/4 cup freshly squeezed lemon juice
12 ounces of crab meat
1 cup mayonnaise or more if needed.
2 avocados, peeled and sliced
1 Boiled egg, sliced
1 tomato, peeled and thinly sliced
Chopped parsley, for garnish

Mash the potatoes. Allow potatoes to cool until they are comfortable to handle.

Ingredients:

2 eggs
1 teaspoon chopped cilantro leaves
1 tablespoon fresh ají (chili), seeded and deveined, pureed
1 tablespoon chopped parsley leaves
2 tablespoons lemon juice
1 tablespoon mustard
1 cup olive oil
Salt

Preparation:

Place eggs in the blender and add mustard, lemon juice, salt, pepper and fresh aji. Turn on blender and start adding a thin stream of olive oil until mayonnaise has a sauce consistency.
Remove from blender and stir in chopped parsley and cilantro.

Ingredientes :

1 cup of lentil
2 cups of water
1 lb baby spinach leaves
1 tsp oil
1 small onion, minced
1 garlic clove, crushed
2 tbsp fresh cilantro, finely chopped
3 tbsp fresh parsley, finely chopped (1 tbsp for decoration)
1/3 cup plain yogurt (optional)
Salt
Pepper

Preparation:

Boil lentils with salty water. Lower the heat and allow to cook until soft. Drain any extra water. Set on the side.

Ingredients :

2 lbs purple corn
1 quince, peeled and diced
2 apples, peeled and diced
2 peaches, peeled and diced
3 cinnamon sticks
3 cloves
1 medium size pineapple, peeled, cored and diced
12 dried peaches
12 prunes, pitted
½ currants
13 oz sugar
3/4 cup cornstarch
Juice of 1 key lime
Ground cinnamon

Preparation:

Place purple corn in a large pan with 12 cups of water together with the fruit peels, 2 cinnamon sticks, and 2 cloves. Boil for 20 minutes or until water turns into a deep purple color. Strain and keep purple corn water.

8 corns (large corn kernels)
¾ cup milk
¾ cup margarine
1 tablespoon sugar
2 tablespoons pisco
4 eggs separated yolk from white
Salt
Pepper

Filling:
1 ground beef
1 ½ tablespoon vegetable oil
1 garlic clove, crushed
1 teaspoon ají amarillo en pasta / fresh yellow hot chili pepper paste
1 onion, chopped
15 raisins
Salt
Pepper
Oregano
2 hard boiled eggs, cut in slices
3 olives, pitted and chopped
1 teaspoon minced cilantro
Sugar to sprinkle on top

Preparation:
Corn Cake:
Blend or process corn kernels with milk.

1 can of beans (any type you prefer)
1 pound bacon, diced
2 tablespoons vegetable oil, plus more for frying
1 large onion, finely chopped
3 cloves garlic, finely chopped
1/2 cup ají amarillo paste / hot yellow pepper paste
1 cup cooked rice
Salt and pepper

Drain liquid from the beans can. Mash beans with a spoon or fork, just enough to obtain a rough pure.

Peruvian Creole Beef Hearts ANTICUCHOS DE CORAZON A LA CRIOLLA

Ingredients:
Anticucho
1 Beef heart
2 tbsp of salt
¾ tbsp pepper
½ tbsp ground cumin
1 ½ tbsp fresh ground garlic
¾ cup of the best red vinegar you can get.

Aji for basting (Salsa de Ají):
Yellow pepper (Aji amarillo).
7 tbsp of annatto oil

Ingredients:

6 medium size whole fish, cleaned
2 tbsp garlic, crushed
1 cup onions, chopped
4 hot peppers
cilantro
1/8 cup oil
1 tsp pepper
1 tsp cumin
Salt as desired
6 banana leaves (bijao leaves)
Salt

Preheat the grill to low.

Mix onions, garlic, oil, pepper, cumin, hot pepper, cilantro and salt. Fill the inside of the fish with this mix, wrap fish with banana leaves tie it with a string. Place them in the grill for about 15 minutes until done.

1 8-ounce package frozen snow peas, thawed
