Chicken Stew (Estofado de Pollo)

Ingredients :

8 pieces of chicken
½ cup of oil
1 tbsp crushed garlic
1 cup of onions finely chopped
2 tbsp tomato paste
2 tbsp of ají panca (peruvian red hot pepper)
½ cup sweet peas
½ cup cutup carrots
½ cup sweet red wine or Port (Oporto) wine
4 white potatoes cut in halves
1 cup of beef stock
Salt
Pepper

Preparation:

Salt and pepper the chicken the pieces. Heat oil in a pot, add the garlic, onions and the chicken, brown it on medium heat. Add the aji panca, tomato paste, add the carrots, peas, Port(Oporto) wine and beef stock. Add the potatoes, cover the pot and let it cook at a slow heat until potatoes are done. Serve with white rice.
