Pisco Sour

Makes 3 drinks

1 egg white
1 tablespoon sugar
1 cup pisco
Juice from 6 limes
Chipped ice
Angostura bitters (optional)

Beat the egg white and sugar in a blender. Add the pisco, lime juice, ice, and angostura bitters if desired. Mix well and pour into shot glasses.

Pisco Sunrise

Makes 1 drink

3-4 ice cubes
2 ounces Pisco
5 ounces orange juice
1/2 ounce grenadine

Pour all ingredients into a tall glass over ice and stir. Garnish with orange slices.

Canelazo

Serves 4

2 cups water
1 cup light brown sugar
4 cinnamon sticks
1 cup dark rum
1 tablespoon lime juice
Sugar
Lime slices for garnish

In top of double boiler add water, sugar, and cinnamon sticks. Fill halfway with water and set over medium-high heat. Stir mixture until sugar dissolves, then continue heating 10 minutes, making sure that mixture does not boil, and lowering heat if necessary.
