6 tbsp vegetable oil
2 lbs stir fry or beef tenderloin
1 tsp freshly crushed garlic
2 large onions thickly cut lengthwise
2 tomatoes thickly cut lengthwise
1 hot yellow chili pepper cut into strips
¼ cup of Pisco Puro Quebranta
½ cup of chicken broth
6 tbsp red vinegar
6 tbsp soy sauce
1 laurel leave
1 sprig fresh oregano
Cut the meat into strips. Heat a large skillet on high heat and pour oil. Once heated add the meat, previously seasoned with salt, pepper and garlic. Sear the meat without stirring and saute, add onions, hot yellow pepper, tomatoes, pour the Pisco and quickly flambe.
Add the sauce already prepared before hand, sprinkle cilantro, check and correct the seasoning if needed. Peel the potatoes, cut them into thin strips for French Fries, fry them in oil and set them on the side. Serve the stir fry with the sauce, pair it with rice nad french fries.
Mix all the ingredients and have it ready to use when needed.
