Layered Potato Torta

Serves 6 to 8

2 pounds yellow potatoes, peeled and boiled
1 cup chipotle peppers
1 teaspoon salt
1 lemon
1 red onion, sliced
1/2 pound smoked ham, shredded
1 cup mayonnaise
Chopped parsely, for garnish

Mash the potatoes. Allow potatoes to cool until they are comfortable to handle.
Mix the potatoes with the peppers, salt and juice from half a lemon. Knead until it forms a smooth paste. If the potatoes don’t stick together well, add a trickle of vegetable oil and continue kneading until it sticks.

In a separate container, season the onion with salt and juice from the other half of the lemon. Mix in the ham and mayonnaise. In a serving dish, spread half of the potato mixture. Top with the ham mixture, and then add a second layer of potato. Garnish with parsley.
