Ingredients:

5 ají amarillo/ peruvian hot yellow peppers.
2 garlic cloves
2 cups of cheese (ricotta or feta)
½ cup of vegetable oil
2 boiled eggs sliced for decoration
4 Mediterranean olives for decoration
2 lbs of golden or white potatoes, boiled, peeled and thickly sliced.
Lettuce for decoration
Salt (may not need salt if using feta cheese)
Optional: Milk

Ingredients:

1 pound mix cooked seafood (cooked shrimp, clams, scallops, etc.)
1 pound of fillet of sole or any fresh uncooked, white, tender fish
1 large onion, thinly sliced and washed.
2 tbsp chopped cilantro
3 cloves crushed garlic
2 seeded, deveined and finely chopped fresh hot chili pepper (more or less depending on preference)
Salt and pepper, to taste
10 freshly squeezed key limes juice, enough to cover seafood.
Lettuce leaves for decoration
2 ears corn, boiled & sliced
2 sweet potatoes, boiled, peeled and cut into slices one inch thick.

4 tsp dark beer
1 tsp cumin

2 large onions thickly cut lengthwise
2 tomatoes thickly cut lengthwise
1 hot yellow chili pepper cut into strips
¼ cup of Pisco Puro Quebranta
Chopped Cilantro

Sauce :
½ cup of chicken broth
6 tbsp red vinegar
6 tbsp soy sauce
1 laurel leave
1 sprig fresh oregano

Adobo de Chancho, MARINATED PORK

Ingredients :

4 lbs of pork meat
2 tsp annato
5 garlic cloves, minced
1 cup ají panca / sundried red aji (chili) paste
¼ cup oil
Pepper
1 tsp ground cumin
3/4 cup vinegar
3 medium size onions, thickly cut julienne style
Salt
3 tbsp water.

Preparation:

Trim excess fat from pork and cut in medium size pieces. Place pork in a bowl and season with annatto, cumin, salt, pepper and garlic. Add vinegar, water, onions and panca ají paste. Marinate for 24 hours in the refrigerator.

Ingredients :

2 medium size red onions
1 or 2 ají amarillo/ fresh yellow aji (chili), seeded, deveined, juliene (or
1tsp of Peruvian yellow hot sauce that comes on a paste)
Salt
Pepper
Juice of 3 key limes
Vegetable oil
Cilantro or parsley, minced

Preparation:

Slice onions very thin. Soak in a bowl with water, change water several times to rinse off the strong flavor of onions. Drain and let them dry.

Place onions in a bowl and season with salt and pepper to taste.

SOUTHERN FLANK STEAK

Ingredients :

2 tbsp ketchup
2 garlic cloves, crushed
Salt
2 lbs flank steak
1 cup red wine vinegar
2 tbsp soy sauce
3 tbsp ají panca / sundried red aji (chili) paste (available on line, whole
sundried, paste or powder)
Pepper
10 medium size golden potatoes

Preparation:

Boil meat in water for approx. 3 hours until meat is tender. Remove meat and cut in individual servings.

Combine vinegar, sundried red pepper paste, ketchup, soy sauce, crushed garlic, salt and pepper and marinate meat for 2 hours. Remove meat and save marinade.
