Spicy Peruvian Pork

Serves 4

2 1/2 pounds boneless pork shoulder, cubed
1/4 cup white vinegar
1 tablespoon ground cumin
1 tablespoon ground turmeric
1/4 teaspoon garlic powder
Salt and pepper, to taste
1 tablespoon vegetable oil
1 cup orange juice
1/2 cup water
1 tablespoon dried minced onion
1 tablespoon all-purpose flour
2 tablespoons water

Place pork into a large bowl. In a small bowl, mix together the vinegar, cumin, turmeric, garlic powder, salt and pepper. Pour over the pork, and stir to coat. Cover and refrigerate for 1 hour.

2 lb beef meat in pieces
2 lb beef bones to make stock
2 corns, cut in 1-inch slices
1 cup green peas
2 tablespoons butter
3 garlic cloves, crushed
½ tsp pepper
½ tsp cumin
Parsley, finely chopped for decoration

1 lb tripe
2 tablespoons milk
1 stalk of fresh mint
½ cup cooking oil
2 cups finely chopped onion
½ tbsp minced garlic
¼ tablespoons cumin
Fresh aji amarillo / yellow aji (chile pepper), pureed to taste
1 tsp turmeric
4 potatoes, peeled, cooked, and cut into small square chunks
Juice of one lemon
Salt
Pepper
2 tablespoons chopped fresh mint
