1 pound mix cooked seafood (cooked shrimp, clams, scallops, etc.)
1 pound of fillet of sole or any fresh uncooked, white, tender fish
1 large onion, thinly sliced and washed.
2 tbsp chopped cilantro
3 cloves crushed garlic
2 seeded, deveined and finely chopped fresh hot chili pepper (more or less depending on preference)
Salt and pepper, to taste
10 freshly squeezed key limes juice, enough to cover seafood.
Lettuce leaves for decoration
2 ears corn, boiled & sliced
2 sweet potatoes, boiled, peeled and cut into slices one inch thick.
Wash fish with water and salt. Cut fish into 1/2 inch thick squares. Place fish and cooked seafood on a large glass or ceramic bowl (never use a metal bowl it doesn't mix well with the citrus), season with crushed garlic and salt. Add chopped hot chili pepper, lime juice, pepper and chopped cilantro. Let it set for 10 minutes. Taste juice to check for hotness. In a large platter make a bed of lettuce leaves, place bowl content on top of lettuce adding onions on top of marinated seafood, decorate with slices of corn, sweet potatoes and more hot pepper (if desired).
