Wheat Risotto in Cilantro Sauce / Risotto de Trigo al Culantro

Serves 6

Ingredients :

1 lb wheat
2 medium onions, chopped
2 tomatoes, chopped
2 tablespoons ají amarillo paste / hot yellow chili pepper paste
2 tablespoons fresh cilantro (blended with very little water)
1 teaspoon garlic minced
3 tablespoons oil
¾ cup milk
½ cup farmers cheese (ricotta, feta)
¼ cup minced cilantro
1 chicken bouillon cube

Preparation:

Soak wheat in water for ½ hour. Wash well and drain.

Place wheat in pan, cover with water and cook. Drain and discard water.

2 cups wheat, soaked in water and rinsed
2 tablespoons olive oil
4 tablespoons butter, at room temperature
1 large onion, finely chopped
2 garlic cloves, minced
2 tablespoon fresh yellow hot pepper (aji)paste
1 ½ teaspoon dried thyme
½ cup dry white wine
3 cups beef stock. Use more if necessary
1 cup heavy cream
3/4 cup grated Parmesan cheese
Salt
Pepper
1 ½ cup cooked fava beans (optional)
1/2 cup farmers cheese, diced
Chopped parsley for garnish

Caramel Pudding with Port Meringue / Suspiro a la Limena

Serves 8

Ingredients :

1 can condensed milk
1 can evaporated milk
1 cinnamon stick
5 egg yolks
1 teaspoon vanilla
1 cup sugar
¼ cup of port wine
2 egg whites
Ground cinnamon

Preparation:

In a medium saucepan combine milks with cinnamon. Bring to a boil constantly stirring with a wooden spoon until creamy and thick. Let stand for 10 minutes.

Beat egg yolks, add vanilla. Gradually incorporate to milk preparation, mixing well.

Pour into a serving bowl or individual cups.

3 red onions, peeled and cut in eight pieces
2 lb all golden Yukon potatoes, peeled, cut for French fries
4 ají amarillo fresco / fresh yellow hot pepper (chili), sliced into thin strips
4 tomatoes cut in eighths
2 tbs chopped parsley
1 tbs balsamic vinegar
2 tbs soy sauce
1 ¼ cups oil
½ teaspoon key lime juice

2 lb of pasta (Spaghetti, Linguine or Fettuccine)
2/3 cup evaporated milk, approximately
1.5 cups of fresh basil leaves
2.5 cups of fresh spinach leaves, rinsed
¼ cup nuts, (peanuts, walnuts or pine nuts)
½ cup oil, approximately
1 cups white fresh cheese (ricotta, feta or even cream cheese if desired)
½ cup grated Parmesan cheese (optional)

Makes 20 alfajores.

Ingredients :

1¼ cup cornstarch
½ cup flour
2 tsp baking powder
3 tbsp butter
¼ cup confectioners’ sugar
2 egg yolks
1 tsp lemon peel
2 tbsp milk (or as needed)
¾ to 1 cup manjarblanco (Peruvian caramel)

Preparation:

Sift flour and cornstarch with baking powder. Whip butter with sugar until creamy and fluffy. Add egg yolks, one by one, while beating. Add sifted ingredients and lemon peel.

Ingredients :

1 can condensed milk

Preparation:

Place can in a medium size pan (or a double boiler), cover with water and bring to a boil for 2 hours or 45 minutes in a pressure cooker. Cool before opening the can.

Transfer to a serving bowl. Serve.

1 tbsp oil
1 small onion, finely chopped
2 tbsp cilantro, finely chopped
3 tbsp parsley, finely chopped (use 1 tbsp for decoration)
1 fresh yellow ají, seeded and deveined, finely chopped
2 loins of pork, cut in medium size pieces
1 onion, chopped
4 garlic cloves, peeled and crushed

5 tsp Maca powder

2 boiled eggs sliced for decoration
4 Mediterranean olives for decoration
