Ingredients :

12 medium size golden potatoes
1 large onion, finely chopped
3 red hot rocoto peppers
1 lb fresh farmers cheese, diced (ricotta, feta)
2 slightly beaten eggs
½ cup evaporated milk
¾ cup vegetable oil
Chopped parsley
Salt
Pepper
Lettuce
Black olives for decorating

Preparation:

Boil potatoes in water.

Wash hot peppers thoroughly, seed and devein. Blend with little water to make a puree.

Pour blended hot peppers in a medium saucepan. Bring to a boil for 10 minutes or until cooked.

4 corn, sliced into large pieces, boiled and cooked
4 sweet potatoes, boiled, peeled and cut into quarters.
2 pounds lima beans

6 carrots, peeled and cut in half
3 medium turnips, peeled and quartered
2 pounds of yucca root, peeled and quartered
8 potatoes, peeled and cut in half
1 small cabbage, cut into chunks
2 leeks, cut in half lengthwise
4 celery stalks, cut into large pieces

Ingredients :

½ cup butter
Pepper
2 lb lima beans
Salt

Preparation:

Place lima beans in a large saucepan and cover with water.

Cook lima beans at moderate heat. Boil for 5 minutes or until skin comes out easily.

Drain and skin remaining lima beans. Return to pan and cover with water. Return to heat until lima beans are soft and tender.

Drain and blend beans with the necessary amount of cooking liquid. Add butter and combine. Puree must have a soft and creamy texture. Season with salt and pepper.

Pisco Sour

Ingredients :

1 cup sugar
1 cup key lime juice
2 egg whites
12 ice cubes, crushed
Few drops Angostura Bitter
2 cups pisco

Preparation:

Blend pisco with sugar, lemon juice and Angostura Bitter.

Add ice and finally the egg white. Blend a few minutes.

Pour into small glasses and top with a pinch of cinnamon powder and a few drops of Angostura Bitter.

Peruvian Stir Fry / Lomo Saltado II

2 pounds flank or skirt steak
1 tbsp red wine
2 tbsp vegetable oil
2 tsp minced garlic
4 tomatoes, chopped
Salt, pepper and cumin to taste
2 medium onions, thickly sliced
Chopped parsley
1 tbsp vinegar
5 medium potatoes, thinly sliced for French Fries
Vegetable oil

Cut steak into thin strips and marinate in wine for 1 hour. In a large sauté pan, heat the oil and add the garlic. Cook for 3 minutes. Add the steak, and continue to cook until steak reaches desired doneness. Season with salt, pepper, cumin. Reserve some of the cooking liquids.
