Papas Rellenas
Serves 6 to 8
4 cups mashed potatoes
1 cup flour
1 egg
1 pound ground beef
1 cup onion, finely chopped
garlic
Salt and pepper
3 boiled eggs, chopped
Black olives
Vegetable Oil
In a large bowl, mix the potato, flour, and egg. In a separate bowl, mix the beef, onion, garlic, salt and pepper to taste, egg, and olive. Cook the beef mixture in a saute pan until browned, let cool. Heat 4-inches of oil in a cast iron skillet. Flour the palm of your hand and scoop up a heaping tablespoon of the potato mixture. With a spoon, scoop out a hole in the center. Place 1 teaspoon of the meat mixture in the center, and with well-floured hands, fold top of potato over to completely close it up. Gently roll and fry until golden brown.
