Quinoa Pie

Serves 8

1 tablespoon olive oil
1 clove garlic, minced
1 medium onion, finely chopped
1 cup cooked and diced chicken
1 diced tomato
2 tablespoons paprika
1/4 cup chopped parsley
1 1/2 cups of cooked quinoa
3 eggs, beaten
3 tablespoons raisins soaked in water for 10 minutes
5 black olives
1/2 cup diced ricotta cheese
Salt and pepper
1 egg, hard boiled
Parmesan cheese

In a large sauté pan, add the oil and cook the onion and garlic for 3 minutes. Add the chicken, tomato, paprika, and parsley, simmer for 5 minutes. Put quinoa in a large bowl; add the chicken mixture, eggs, raisins, olives, and cheese. Season to taste with salt and pepper. Grease baking pan and place half of quinoa, drizzle slices of hardboiled egg and cover with rest of quinoa and sprinkle with Parmesan cheese. Bake for 20 minutes, serve warm.
