Fried Fillet O'Fish with Onion Salsa / Pescado Frito con Salsa criolla

Serves 6

Ingredients for the fish:

6 fish fillets of your liking
Salt & Pepper
Flour
½ cup vegetable oil or more if needed

Ingredients for Onion Salsa:

2 medium size red onions
2 ají amarillo/fresh yellow hot chili pepper, seeded, deveined, cut julienne style
Salt
Pepper
Juice of 3 freshly squeezed limes
Vegetable oil
Cilantro or parsley, minced
Lettuce for decoration

Onion Creole Sauce / Salsa Criolla

Ingredients :

2 medium size red onions
1 or 2 ají amarillo/ fresh yellow aji (chili), seeded, deveined, juliene (or
1tsp of Peruvian yellow hot sauce that comes on a paste)
Salt
Pepper
Juice of 3 key limes
Vegetable oil
Cilantro or parsley, minced

Preparation:

Slice onions very thin. Soak in a bowl with water, change water several times to rinse off the strong flavor of onions. Drain and let them dry.

Place onions in a bowl and season with salt and pepper to taste.
