Ingredients:

½ cup of oil
1 medium onion, diced
1 garlic clove, finely diced
Hot Yellow Pepper paste as desired
1 tsp paprika
2 lbs white potatoes peeled, boiled and cut into pieces
¾ cup beef broth
¾ cup fresh cheese
3 tbsp parsley
½ cup of evaporated milk
Salt

Pisco Sour

Ingredients :

1 cup sugar
1 cup key lime juice
2 egg whites
12 ice cubes, crushed
Few drops Angostura Bitter
2 cups pisco

Preparation:

Blend pisco with sugar, lemon juice and Angostura Bitter.

Add ice and finally the egg white. Blend a few minutes.

Pour into small glasses and top with a pinch of cinnamon powder and a few drops of Angostura Bitter.

2 can of sweetened, condensed milk
1 can of evaporated milk
1 teaspoon vanilla extract
8 eggs, lightly beaten
1/4 cup water

Preheat oven to 400 degrees F.

In a medium bowl, mix the condensed milk, evaporated milk, vanilla, and eggs.

5 black Mediterranean olives, seeded and quartered
2 hard boiled eggs, cut into wedges
1 tbsp parsley, chopped

Peruvian Stir Fry / Lomo Saltado II

Serves 6

2 pounds flank or skirt steak
1 tbsp red wine
2 tbsp vegetable oil
2 tsp minced garlic
4 tomatoes, chopped
Salt, pepper and cumin to taste
2 medium onions, thickly sliced
Chopped parsley
1 tbsp vinegar
5 medium potatoes, thinly sliced for French Fries
Vegetable oil

Cut steak into thin strips and marinate in wine for 1 hour. In a large sauté pan, heat the oil and add the garlic. Cook for 3 minutes. Add the steak, and continue to cook until steak reaches desired doneness. Season with salt, pepper, cumin. Reserve some of the cooking liquids.

1 aji limo / limo pepper (chili), seeded and deveined, finely chopped
Cooked corn kernels for decoration
Sweet potato, cooked and cut in slices for decoration

1 tbsp cilantro
2 celery stalks, cut in pieces
½ tsp fresh ginger, minced
½ tsp garlic, minced
1 tbsp onion, chopped
1 tbsp parsley, finely chopped

Ají Cream Sauce:
1 lb ají amarillo fresco / fresh yellow aji (chili)
3 tablespoons vegetable oil
¼ cup sugar

HUACATAY (BLACK MINT) SAUCE

Ingredients :

1 lb farmers cheese (ricotta, feta)
¾ cup cream or evaporated milk
Huacatay (Black Mint) leaves
Salt

Preparation:

Place in blender or processor, cheese, cream or milk, and huacatay leaves.

Blend until mixture is creamy.

Add 1 teaspoon ground ají amarillo /hot yellow pepper as desired.

Ingredients :

3 cups beans (preferably Peruvian Canary beans)
1 lb pork fat or bacon, diced
2 cups of cooked rice
2 onions, finely chopped
2 garlic cloves, finely chopped
2 fresh yellow aji/chili (aji amarillo fresco), seeded and deveined

Preparation:

Soak beans overnight. Drain and cook in unsalted water together with pork fat or bacon until soft.

Remove from heat and let cool. Beat with a wooden spoon to form a coarse purée. Set aside and let cool.

Frezzed Dried Potatoes with Pork / Carapulca / Carapulcra / Papa Seca

Serves 6 to 8

Ingredients :

1 lb freeze dried potatoes
2 lb boneless pork meat
3 oz peanuts, toasted and coarsely processed
2 tbsp crushed garlic.
3 tbsp ají panca molido / sundried red aji (chili) paste
2 tbsp ají mirasol / sundried yellow aji (chili) paste
¼ cup red vinegar
1 cup dry white wine
½ teaspoon pepper
1 tablespoon cumin
4 cups chicken bouillon
¼ cup port wine
Salt

Preparation:

Brown freeze dried potato in a skillet until golden. Transfer to a bowl and cover with water for 30 minutes approximately. Drain, set on the side.

4 ají amarillo fresco / fresh yellow aji (chili) washed, seeded and deveined.
1 teaspoon salt

Preparation:

Blend or process parsley leaves with olive oil and aji.

Add salt. Mixture must be creamy.

Serve with: potatoes, meats or fish.
