1 small onion, chopped
2 garlic cloves, minced
1 fresh yellow aji pepper (chili), seeded and deveined, finely chopped
Water, the necessary amount
2 lb winter squash (acorn, buttercup, butternut or similar) seeded, chopped
1 lb potatoes, peeled and diced
½ cup fresh fava beans
1 egg, slightly beaten
1 oz fresh cheese, diced
Spearmint sprig (optional)
Salt
Pepper
2 tablespoons oil

1 3/4 pounds skinless sea bass filets, or any fresh white fish.
1 red onion, finely sliced (washed and rinsed with salty water as to tame the strong flavor)
1 red aji limo pepper (chili), chopped very fine
1/2 yellow aji pepper (chili), chopped very fine
1 cup lime juice
Salt
1 tbsp cilantro finely chopped
1 tsp crushed garlic
Lettuce to decorate
2 corn on the cob sliced on 1 inch rounds
2 sweet potatoes, boiled and sliced

Serves 4

1 1/2 cups water
6 ounces raspberry Jell-O gelatin
1 (12 fluid ounce) can evaporated milk, chilled
1 cup fresh raspberries or strawberries

Chill a large mixing bowl and mixer's beaters in the freezer. Bring the water to a boil in a small saucepan. Stir in gelatin until completely dissolved, then place into refrigerator until cool (but not solid).

1 fresh red pepper, seedless, cut julienne
1 cup cilantro leaves, blended with very little water
1 beef bouillon cube dissolved in ½ cup hot water
1 cup dry white wine
1 bottle of beer
1 tablespoons ají amarillo fresco / fresh yellow aji (chili) blended
8 medium-size golden potatoes, peeled and cut in half
1 carrot, diced
1 cup fresh peas

1 lb lump crab meat, picked over and flaked
20 snow peas or Chinese peas, cooked until crisp tender, cut into thin julienne
¼ cup cilantro leaves, finely chopped
2 fresh yellow aji, seeded and deveined, cut into thin julienne
8 limes freshly squeezed
Lettuce leaves
12 whole cooked crab claws, to serve with the ceviche (optional)

Green onion, (scallions) green part, finely chopped
Aji limo (small red hot pepper) in slices, for decoration

Ingredients :

4 salmon fillets, without skin
1/3 cup olive oil
8 oz cream cheese
1 cup natural yogurt
3 green onions (scallions) finely chopped, white and green parts
Salt
Pepper
Drops of lemon juice

Preparation:

Place cream cheese with yogurt and green onions in a medium size saucepan. Bring to a boil stirring. Lower heat and season with salt, pepper and drops of lemon juice. Set aside and keep warm.

½ medium size onion, halved
1 leek, rinsed and halved
1/3 cup dry white wine
3 tbsp lime juice
2 whole garlic cloves, skinned

Mussel preparation
2 tbsp oil
2 red onions, finely chopped
3 tbsp chopped leek, white part only
2 tbsp minced garlic
2 tbsp sun dried yellow ají paste
2 tbsp butter
1 tbsp Dijon mustard
1 tsp turmeric
2 cups mussel stock
2 tbsp bread crumbs
2 tbsp grated Parmesan cheese
Chopped parsley
Thyme

2 tablespoons olive oil
2 shallots, chopped
1 teaspoon cilantro
1/2 teaspoon cardamom
1/2 cup chopped red pepper
2 garlic cloves, minced
1/2 pound smoked tofu or yogurt
1/2 teaspoon orange zest
1 cup green beans, cut into 2-inch long pieces
1 teaspoon smoked paprika
1/2 cup sun-dried tomatoes packed in oil
2 cups cooked quinoa
Salt and pepper

Heat the olive oil in a large pan. Add the shallots, cilantro and cardamom.

Chickpea Stew / Estofado de Garbanzos

1 large yellow onion, peeled and chopped
2 garlic cloves, peeled and minced
2 tablespoons olive oil
2 cups cooked chickpeas
4 tomatoes, peeled and sliced into wedges
1 small yellow squash, peeled and diced
1 teaspoon cilantro
1 teaspoon ground cumin
1 teaspoon allspice
Salt and pepper

In a deep stock pot, saute the onion and garlic in oil until onions turn golden brown. Add the chickpeas, tomato wedges, diced squash, and all the seasonings.
