Aji Dipping Sauce / Crema de Aji amarillo

Makes 2 cups

1/2 cup hot yellow pepper paste / aji amarillo paste.
1/4 cup olive oil
1/4 cup mayonnaise
1/4 cup sliced green onions
3 tablespoons lime juice
Salt and pepper to taste

Mix all ingredients in a medium bowl and let chill in refrigerator. Serve at room temperature.

Fried Yucca Root / Fried Cassava / Yuca Frita

Serves 10

2 lbs yucca root, peeled and boiled
Salt

Cut the yucca into shapes similar to French fries.

In a deep pot or a deep fryer, heat oil to 350 degrees F. Fry the yucca, in batches, until golden brown and crispy. Sprinkle with salt to taste. Serve with your favorite dipping sauce.

Basic Vinaigrette / Salsa Vinagreta Basica

Makes 1 cup

Ingredientes :

¼ cup of vinegar
¾ cup of either olive oil or vegetable oil
1 cup of mustard
Salt
Pepper
2 tbs of fresh herbs like cilantro or parsley (optional)

Preparation:

Mix vinegar, salt, mustard and herbs. Whisk well. Add oil gradually as you continue to whisk. Mix well

1 1/2 tablespoons crushed garlic
1/2 teaspoon salt
2 tablespoons rice vinegar
2 tablespoons soy sauce
2 tablespoons canola oil
2 teaspoons cumin
1 1/2 teaspoons ground black pepper
1 1/2 pounds flank steak, cut into strips
2 medium red onions, cut into strips
4 medium tomatoes, quartered
1-2 jalapeno pepper, cut into strips
1/4 cup fresh cilantro
4 potatoes, peeled, cut into strips for french fries
Salt and pepper
Canola oil

Directions:
Make french fries with the potatoes and set on the side.

Garlic Quinoa

Serves 4

1 tablespoon olive oil
1/2 cup chopped onion
2 teaspoons minced garlic
1 cup quinoa, rinsed well and drained
2 cups water or broth
1/4 teaspoon salt

Sauté the onion in olive oil for 2-3 minutes; add garlic and continue sautéing for another 30 seconds. Add quinoa, water and salt to pan; bring to boil then reduce heat then cover and simmer 15 minutes until liquid is absorbed. Serve warm.

Oven Baked Plantains / Platanos Verde al Horno

Serves 4

4 very ripe plantains
Nonstick cooking spray
Cinnamon

Preheat oven to 450 degrees F.

Coat a nonstick cookie sheet with cooking spray. Cut the ends off of the plantains and peel. Cut each plantain on the diagonal into 1/2 inch slices.
Arrange in single layer, sprinkle with cinnamon, and coat tops with cooking spray. Bake, turning occasionally, for 10-15 minutes, until plantains are golden brown and very tender.

Pisco Sunrise

Makes 1 drink

3-4 ice cubes
2 ounces Pisco
4 ounces orange juice
3/4 ounce grenadine

Place ice in the bottom of a glass. Pour pisco, orange and grenadine from approximately 10 inch distance from the glass as to avoid mixing the colors.

Ingredients:

2 eggs
1 teaspoon chopped cilantro leaves
1 tablespoon fresh ají (chili), seeded and deveined, pureed
1 tablespoon chopped parsley leaves
2 tablespoons lemon juice
1 tablespoon mustard
1 cup olive oil
Salt

Preparation:

Place eggs in the blender and add mustard, lemon juice, salt, pepper and fresh aji. Turn on blender and start adding a thin stream of olive oil until mayonnaise has a sauce consistency.
Remove from blender and stir in chopped parsley and cilantro.

Butter Cake / Bizcocho de Mantequilla

Serves 12

Ingredients :

½ cup butter, at room temperature
2 cups sugar
4 eggs
3 cups flour
3 tablespoons baking powder
1 cup milk
1 teaspoon vanilla or
Lemon peel from 2 lemons or orange peel from 1 orange
Confectioner´s sugar to dust over cake

Preparation:

Whip butter in the mixer and gradually add sugar until mixture is creamy. Add eggs one by one, beating well after each addition.
Lower speed and gradually add sifted flour and baking powder, alternating with the milk.
Add in vanilla or lemon or orange peel and mix.
