Lentils and Spinach / Lentejas con Espinacas

Serves 2

Ingredientes :

1 cup of lentil
2 cups of water
1 lb baby spinach leaves
1 tsp oil
1 small onion, minced
1 garlic clove, crushed
2 tbsp fresh cilantro, finely chopped
3 tbsp fresh parsley, finely chopped (1 tbsp for decoration)
1/3 cup plain yogurt (optional)
Salt
Pepper

Preparation:

Boil lentils with salty water. Lower the heat and allow to cook until soft. Drain any extra water. Set on the side.
