Snapper Ceviche Video Recipe

Seabass Ceviche / Ceviche de Corvina

Serves 4

1 3/4 pounds skinless sea bass filets, or any fresh white fish.
1 red onion, finely sliced (washed and rinsed with salty water as to tame the strong flavor)
1 red aji limo pepper (chili), chopped very fine
1/2 yellow aji pepper (chili), chopped very fine
1 cup lime juice
Salt
1 tbsp cilantro finely chopped
1 tsp crushed garlic
Lettuce to decorate
2 corn on the cob sliced on 1 inch rounds
2 sweet potatoes, boiled and sliced

Tuna Fish Ceviche / Ceviche de Atun

Ingredients :

2 cans solid white tuna, drained
Juice of 5 limes
3 onions, cut julienne style
2 ají amarillo fresco / fresh yellow aji (chili)seeded, deveined and chopped
Lettuce for decoration
6 thick slices of cooked sweet potatoes
2 corn on the cob, cut in sections
2 tbsp finely chopped celery
1 tbsp parsley, finely chopped
1 tbsp chopped cilantro
1 tbsp ají amarillo fresco / fresh yellow aji (chili) paste
1 tsp garlic
Salt
Pepper

Preparation:

Combine onions with lime juice and celery. Add tuna, chopped fresh aji, and mix.
