1 lb wheat
2 medium onions, chopped
2 tomatoes, chopped
2 tablespoons ají amarillo paste / hot yellow chili pepper paste
2 tablespoons fresh cilantro (blended with very little water)
1 teaspoon garlic minced
3 tablespoons oil
¾ cup milk
½ cup farmers cheese (ricotta, feta)
¼ cup minced cilantro
1 chicken bouillon cube
Soak wheat in water for ½ hour. Wash well and drain.
Place wheat in pan, cover with water and cook. Drain and discard water.
Heat oil in a pan and sauté onion, garlic, ají, blended cilantro and tomato. Cook and season.
Add bouillon cube and bring to a boil for a few minutes.
Add wheat, stirring. Finally add milk, cheese and chopped cilantro.
